I’ve been going through a bit of a mini quiche phase recently so I feel it’s about time I share the recipe I use when I make these bad boys. They’re delicious and super easy, and the best part is they don’t even need crust. One big piece of advice though is to make sure you have an extremely nonstick pan or grease like crazy because I greased mine a bit and they still stuck like mad and I spent days trying to get it all off, which is not fun and makes it harder to enjoy the delicious quiches.
Anyway, enough of my complaining, this recipe is super simple and quick and makes six mini quiches; perfect for that morning brunch with friends alongside some mimosas. Because who doesn’t love a good mimosa.
Ingredients
1 onion
4 eggs
A handful of spinach
6 slices of bacon
A handful of grated cheese of your choice
20g self-raising flour (or plain flour with baking soda)
35ml of milk
Salt and pepper to taste
You can add other things like bell peppers or other vegetables as well
- Stick the bacon on to cook so it has time to cool before you need to chop it. Chop the onion and put it in the pan until they’re soft and translucent. While those are cooking combine the eggs, milk and salt and pepper and whisk until smooth. (You don’t really need a whisk here, a fork is totally fine and does the job.) Then add the flour to the egg mixture and whisk until smooth again. When it cooks the flour will coat the outside of the quiches and create a thin crust.
- Grate your cheese if need be and roughly chop the handful of spinach. Depending how much spinach you like you can make it a small or fairly large amount relative to the rest of the quiche. When the bacon is done and cooled chop it into small bits, then add the bacon, onion, cheese and spinach evenly among the six cups (I just use a cupcake tray, but you could use a muffin tray or anything similar that you might have).
- Add the egg mixture last and fill just below the top, then pop them in the oven at 200°c/400°f for 20-30 minutes. Don’t open the oven before the 20 minute mark because the quiches will collapse and not be able to rise again. When done, just run your knife along the outside of the quiches to loosen them before taking them out.
Refrigerate or serve warm. Happy brunching!
